North West Territories Bannock Bread with Cloudberry Jam

1 cup(s), (240 ml)
1 cup(s), cloudberry or rasberry (240 ml)
- Preheat oven to 425°F (210° C). Coat an 8-inch square baking pan with cooking spray.
- In a large bowl, combine flour, baking powder and salt. Add butter and mix with your fingers until butter is pea-size. Add water and mix with a spoon until a soft dough forms.
- Transfer dough to prepared pan and press down with wooden spoon to cover the pan’s surface. Bake 20 to 25 minutes, until lightly golden.
- Cool in pan 5 minutes before slicing into 8 equal pieces. Serve with cloudberry jam on the side.
