Ingredients

All-purpose flour

2½ cup(s), (600 ml)

Baking powder

1½ tsp(s), (7,5 ml)

Table salt

½ tsp(s), (2 ml)

Light butter

cup(s)

Water

1 cup(s), (240 ml)

Preserves

1 cup(s), cloudberry or rasberry (240 ml)

Instructions

  1. Preheat oven to 425°F (210° C). Coat an 8-inch square baking pan with cooking spray.
  2. In a large bowl, combine flour, baking powder and salt. Add butter and mix with your fingers until butter is pea-size. Add water and mix with a spoon until a soft dough forms.
  3. Transfer dough to prepared pan and press down with wooden spoon to cover the pan’s surface. Bake 20 to 25 minutes, until lightly golden.
  4. Cool in pan 5 minutes before slicing into 8 equal pieces. Serve with cloudberry jam on the side.
