Make this quick and easy version of individual pizzas, with medium pitta bread used for the bases. Ingenious!


Whole wheat pita(s)

4 small

Store-bought pizza sauce

4 tbsp(s)

Canned tomato paste

2 tbsp(s)

Fresh tomato(es)

4 medium, thinly sliced

Uncooked onion(s)

1 small, red, thinly sliced

Italian seasoning

2 tsp(s)

Green pepper(s)

150 gm(s), red or yellow, roasted, in brine, drained and rinsed, (5 1/2oz)

Feta cheese

75 gm, crumbled, (2 3/4oz)

Table salt

1 tsp(s)

Black pepper

1 pinch, freshly ground


12 large, in brine, black

Rosemary sprig

  1. Preheat oven to 200°C, 400°F
  2. Put the pita breads onto a baking sheet. Mix the pizza topping and sun-dried tomato paste together and spread over the pitta breads. Arrange the tomato slices and red onion on top and sprinkle with the Italian seasoning.
  3. Tear the peppers into strips and scatter them over the pittas, then sprinkle the cheese on top. Season with ground black pepper, then pop 3 olives and a sprig of rosemary on top of each one.
  4. Bake in the oven for 10 - 12 minutes, then serve.Chef’s tip: Use 4 mini pittas to make a tasty snack, halving the quantities of the topping ingredients.
