What a delicious way to turn your turkey leftovers into a hearty brunch, lunch, or dinner. Leftover stuffing gets mixed with chopped turkey and cooked in a mini waffle maker until crispy all over, then topped with a fried egg and gravy. The stuffing is mixed with just enough egg (1 white) to hold it together; if your stuffing is dry and crumbly, stir in a little chicken stock or water. If you’d like to double the recipe to serve 4, use 1 whole egg in the stuffing mixture, and keep the cooked waffles warm in an oven set to 200°F.

Canned turkey gravy

¼ cup(s), warmed, or homemade

Instructions

  1. In a medium bowl, stir together the stuffing, turkey, and egg white until well combined.
  2. Preheat a mini waffle maker. Lightly coat both sides of the maker with cooking spray. Add half of the stuffing mixture; close the maker and cook until lightly browned on both sides, 4 to 5 minutes. Remove the waffle to a plate. Repeat with the remaining stuffing mixture.
  3. Meanwhile, coat a medium nonstick skillet with cooking spray. Heat the pan over medium heat. Crack the eggs into the pan; cook until the whites are set and the yolks are still runny (or to your desired degree of doneness), about 3 minutes. Top waffles with eggs, gravy, and pepper.
  4. Serving size: 1 waffle, 1 egg, and 2 tbsp gravy
