Herb-Roasted Shallots

These roasted shallots make a sweet accompaniment to chicken or fish. And they can be made a day in advance — simply reheat on the stovetop before serving.

Ingredients

Shallots

20 medium, trimmed and peeled

Fat free chicken broth

1 cup(s)

Bay leaf

1 leaf/leaves

Balsamic vinegar

1 tbsp(s)

Table salt

¼ tsp(s)

Fresh thyme

1 tbsp(s), or 1/4 tsp dried thyme if fresh is unavailable

Black pepper

¼ pinch(es)

Instructions

Preheat oven to 400ºF. Place shallots in a roasting pan.

In a bowl, combine broth, bay leaf, thyme, vinegar and salt and pepper. Pour over shallots. Bake for 20 minutes. Remove from oven and baste shallots with pan liquids.

Return to oven and bake until shallots are soft, about 20 minutes more. Yields 5 shallots per serving.
