This open-faced melt is a magical way to use up leftover ham if you’ve got some in your fridge. If not, be sure to purchase some from your deli counter to make this quick and easy meal. This sandwich brings a number of good things to your plate: chewy rye with a touch of sour that’s topped with salty ham and gooey, melty cheese. That savory layer is then finished off with a fresh, colorful slaw, which gets a subtle hit of sweetness from the rice wine vinegar. Another big plus of this recipe? It’s ready in just 10 minutes.

Ingredients

Packaged coleslaw mix (shredded cabbage and carrots)

½ cup(s)

Light mayonnaise

2½ tsp(s)

Rice wine vinegar

¾ tsp(s)

Mustard

1 tbsp(s)

Cooked lean ham

2 oz, sliced

Low-fat Swiss cheese

1 oz

Reduced-calorie rye bread

2 slice(s)

Instructions

  1. Combine coleslaw mix, mayonnaise, vinegar, and pinch each salt and pepper in a small bowl; set aside.
  2. Divide mustard, ham and cheese between bread slices; bake at 350°F until melted, 2-3 minutes. Top with slaw.
  3. Makes 1 serving.
