Grilled pasta skewers
Store-bought refrigerated cheese filled tortellini
Fresh cherry tomato(es)
2 small, each cut into 12 slices
1 large, cut into 16 pieces
16 small, or 8 large halved mushrooms
Cooked chicken sausage(s)
8 oz, cut into 24 pieces
- Coat an outdoor grill rack with nonstick spray. Prepare grill to medium-high heat.
- In a medium bowl, toss tortellini with olive oil to coat. In another medium bowl, combine tomatoes, zucchini, bell pepper, and mushrooms. Coat vegetables with nonstick spray, tossing to coat evenly. Sprinkle with Italian seasoning and salt; toss to coat.
- Onto 8 (12-inch) skewers, alternately thread tortellini, vegetables, and sausage. Lightly coat skewers with nonstick spray. Arrange skewers on grill rack; grill until lightly charred, 4 to 5 minutes per side.
- Serving size: 2 skewers
