This miso-based marinade makes an amazing glaze for grilled cod. If you don’t have a fish basket, line an area of your grill with foil to prevent the fish from sticking. Or broil the fish instead. Cod makes an excellent choice for grilling. When the fish begins to flake and turn opaque, it's time to flip it. Use a wider spatula when turning the fish to help prevent the fish from flaking apart when turning.

Uncooked Atlantic cod

20 oz, 4 (5-oz) fillets, skin removed

Uncooked scallions

2 tbsp(s), chopped


  1. In small bowl, whisk miso, sugar, sake, and mirin and spread over fish. Cover and refrigerate for at least 2 hours or up to 1 day.
  2. Off heat, coat grill rack or grill pan with nonstick spray. Preheat gas grill or grill pan to medium, or prepare medium fire.
  3. Remove fish from marinade and reserve marinade. Transfer fish to grilling basket. Grill fish for 5 to 7 minutes. Turn fish over and brush with reserved marinade (to create thicker glaze). Continue to grill until fish is opaque and flakes easily with fork, 5 to 7 minutes more. Garnish fish with scallions before serving.
