Ingredients

Olive oil cooking spray

Uncooked 93% lean ground beef

4 oz

Tortilla chips

3 chip(s), crushed

Uncooked scallions

1 small, chopped

Cilantro

5 tbsp(s), chopped, divided

Chipotle chili powder

½ tsp(s)

Ground cumin

¼ tsp(s)

Table salt

¼ tsp(s), or to taste

Grape tomatoes

1 cup(s), halved

Yellow bell pepper

½ cup(s), chopped, coarsely chopped

Fat free salsa

¼ cup(s)

Plain fat free Greek yogurt

2 tbsp(s)

Red onion

2 tbsp(s), chopped, chopped

Fresh lime juice

Instructions

  1. Off heat, coat a grill or grill pan with cooking spray; preheat to medium-high heat. Meanwhile, combine beef, tortilla chips, scallion, 1 Tbsp cilantro, chili powder, cumin and salt in a bowl; form mixture into 4 meatballs. Thread meatballs onto 2 parallel skewers (for easy flipping) or 1 sturdy skewer.
  2. Grill meatballs, rotating occasionally, until evenly browned and cooked through, about 10 minutes.
  3. Combine remaining 1/4 c cilantro, tomatoes, yellow pepper, salsa, yogurt, onion and lime juice in a small bowl; season with salt, if desired. Serve with meatballs.
