Spice lovers unite! This sandwich hits the spot when you’re in the mood for some heat. To turn it down a notch, simply adjust the amount of the chipotle.


Uncooked boneless skinless chicken breast(s)

1 pound(s), thinly sliced

Table salt

tsp(s), or to taste

Black pepper

pinch, or to taste

Canned chipotle pepper(s)

½ oz, (one medium pepper), finely chopped

Reduced calorie mayonnaise

2 tbsp(s)

Mixed greens

1 cup(s)

High-fibre bread

8 slice(s)

Fresh tomato(es)

1 medium, sliced


  1. Heat grill pan on high heat. Season chicken with salt and pepper. Cook chicken in pan, turning once, until cooked through, 5 minutes.
  2. Combine chipotle and mayonnaise.
  3. Divide greens among 4 slices bread. Divide tomato slices on top of greens. Place chicken on top of tomatoes.
  4. Spread remaining four bread slices with about 2 teaspoons chipotle mayonnaise each. Cover with remaining bread.
