Look for thin carrots – they’re usually the ones sold in bunches with their green tops still attached. After just a few minutes on the grill, these tasty vegetables take on a sweet, smoky flavour. Give this recipe a Moroccan twist by adding a little ground cumin and a pinch of cinnamon to the lemon mixture. These carrots make an excellent side dish for grilled chicken or hamburgers. Or, serve them as an appetizer or snack.

Ingredients

Cooking spray

Lemon zest

2 tsp(s), finely grated

Fresh lemon juice

¼ cup(s)

Honey

2 tbsp(s)

Table salt

¾ tsp(s)

Black pepper

¼ tsp(s)

Carrots

12 medium, peeled, (each about 1⁄2 inch thick; about 13⁄4 lb total)

Fresh mint leaves

3 tbsp(s), chopped

Instructions

  1. Off heat, coat grill rack or grill pan with nonstick spray. Preheat gas grill or grill pan to medium-high, or prepare medium-high fire in charcoal grill.
  2. In small bowl, whisk lemon zest and juice, honey, salt, and black pepper until blended for sauce.
  3. Coat carrots with nonstick spray. Grill, turning occasionally, until carrots are lightly charred and almost tender, about 10 minutes. Brush carrots with some sauce. Continue to grill carrots, brushing once or twice more with sauce, until tender, about 5 minutes. Transfer carrots to platter. Drizzle carrots with some more sauce and sprinkle with mint. Serve with any remaining sauce.
