Five-Ingredient Pepper & Tomato Sheet Pan Pizza

Pizza + salad topper = one delicious meal. With its colourful presentation, it’s hard to believe that this pizza contains only five ingredients. Thanks to packages of multi-coloured cherry tomatoes and mini sweet peppers, you get lots of colour variety without having to buy multiple ingredients. The peppery bite of arugula is a lovely foil to the sweet peppers and tomatoes. If the arugula at your store looks a little past its prime, try baby spinach instead.

Whole wheat pizza dough
1 pound(s)
Kosher salt
½ tsp(s)
Black pepper
½ tsp(s)
Shredded part-skim mozzarella cheese
1 cup(s)
Sweet mini baby bell peppers
1½ cup(s)
Baby arugula
3 cup(s)
Cherry tomatoes
2 cup(s)
Olive oil
1½ tsp(s)
Instructions

Place a sheet pan in the oven. Preheat the oven to 450°F (leave the pan in the oven as it heats).

Onto a large piece of parchment paper, roll the dough into a 16 x 10–inch rectangle. Sprinkle ¼ tsp each salt and black pepper over the dough; prick the dough all over with a fork. Carefully place the dough (on the paper) on the hot pan. Bake for 6 minutes.

Remove the dough from the oven (leave the oven on). Sprinkle the cheese evenly over the dough; scatter the pepper slices evenly over the dough. Bake until the cheese melts and the crust is golden brown, 8 to 10 minutes.

Meanwhile, in a medium bowl, toss together the arugula, tomatoes, oil, and remaining ¼ tsp each salt and black pepper. Top the pizza with the arugula mixture. Cut into 8 pieces.
