Ingredients

Light mayonnaise

1 cup(s), or vegan mayonnaise if preferred

Water

¼ cup(s)

Crushed red pepper flakes

1 tsp(s)

Fresh lemon juice

1 tbsp(s)

Maple syrup

1 tbsp(s)

Apple cider vinegar

3 tbsp(s)

Minced garlic

½ tsp(s)

Table salt

1 pinch, or to taste

Black pepper

1 pinch, or to taste

Uncooked broccoli

3 cup(s), finely chopped

Uncooked cauliflower

2 cup(s), finely chopped

Grapes

1½ cup(s), halved

Unsalted dry roasted almonds

¼ cup(s), finely chopped

Sunflower seeds

¼ cup(s), divided, half set aside for garnish

Hemp seeds

¼ cup(s)

Uncooked sweet onions

1 large, finely diced

Instructions

  1. To make dressing, whisk together the mayo, water, red pepper flakes, lemon juice, maple syrup, apple cider vinegar, garlic, salt, and pepper, until completely combined. Set aside.
  2. To make salad, in a large bowl combine broccoli, cauliflower, grapes, almonds, sunflower seeds, hemp hearts, and onion.
  3. Add the dressing to the salad and toss thoroughly to coat. If needed, season with additional salt and pepper. Garnish with remaining sunflower seeds.
  4. Serving size: 1 1/4 cup of salad and 1/4 cup of dressing
