Cream Cheese & Smoked Salmon Egg Sandwiches
For this low-carb snack, we riff on the flavours of an everything bagel sandwich with cream cheese and smoked salmon. A hard-boiled egg stands in for bread, providing lots of satisfying protein to make this snack more filling.

Uncooked red onion(s)
½ medium, cut into very thin slices
Reduced fat cream cheese
1 tbsp(s), whipped variety
Everything bagel seasoning blend
- Cut each egg in half lengthwise. On the bottom half of each egg, arrange half of the salmon, cucumber, and onion. Spread 1 ½ teaspoons cream cheese on the cut side of the top half of each egg; sprinkle evenly with the everything seasoning. Arrange the egg tops, cheese side down, on the sandwiches.
