Most recipes call for green beans to be cooked until crisp-tender, but to make classic Southern-style green beans, you cook them until they become very tender and start to break down. If you prefer your green beans to be a crisper texture, let the radishes cook for about 10 minutes before adding the beans. Peppery radishes lose their bite and sweeten up as they simmer in the sauce so they don't overpower the green beans.

Ingredients

Unsalted butter

Onion

½ cup(s)

Garlic

2 clove(s), large, finely chopped

Kosher salt

Black pepper

1 pinch(es)

String beans

1 pound(s), washed, trimmed, and cut into 2½- to 3-inch pieces

Radishes

6 medium, scrubbed and quartered

Fat-free reduced sodium chicken broth

2 cup(s), or vegetable broth

Instructions

  1. In large saucepan, melt butter over medium heat and cook, stirring often, until foamy and light golden brown, about 1 minute.
  2. Add onion, garlic, and pinch each of salt and black pepper and cook, stirring constantly, until aromatic, about 1 minute. Add green beans, radishes, and broth. Add another pinch of salt and bring to boil. Reduce heat to simmer. Cover with lid slightly ajar and cook, stirring occasionally, until beans are cooked to desired doneness, about 20 minutes for very tender.
  3. Serving size: 1⁄2 cup
