Start off your meal with this light and tasty classic recipe --- without all the fat!

Ingredients

fresh lemon juice

¼ cup(s)

black pepper

¼ tsp, freshly ground

water

2 Tbsp

grated Parmesan cheese

2 Tbsp

garlic clove(s)

2 clove(s), medium, sliced

olive oil

1 tsp

red wine vinegar

1 Tbsp

anchovies canned in oil drained

2 average, finely chopped or mashed with a fork

Dijon mustard

1 tsp

Worcestershire sauce

½ tsp

romaine lettuce

4 cup(s), shredded, chopped, rinsed well and patted dry

Instructions

  1. Combine all ingredients, except lettuce, in a blender or food processor; purée until blended. (Note: Omit the anchovies if you do not like their flavour.)
  2. Place lettuce leaves in a large bowl and toss with dressing until well coated. Yields about 2 cups per serving.
