This colourful and crunchy chopped salad is a crowd-pleaser at a picnic or potluck. Make it ahead but toss with dressing just before serving.


Canned undrained chickpeas

15 oz, rinsed and drained

Grape tomatoes

2 pound(s), halved

Uncooked bell pepper(s)

1 cup(s), diced, red

Yellow pepper(s)

1 medium, diced

Orange bell pepper

1 medium, diced

Uncooked red onion(s)

1 medium

Crumbled feta cheese

1 cup(s)

Fresh dill

3 tbsp(s), chopped Red wine vinaigrette

Olive oil

2 tbsp(s), extra virgin

Red wine vinegar

1 tbsp(s)

Dijon mustard

  1. Combine all chopped salad ingredients in a large bowl. Whisk together red wine vinaigrette ingredients and pour over salad just before serving. Toss to combine.
