Chicken Noodle Soup with Lemon and Dill

Tender pieces of chicken, colorful carrots, celery and onion, a touch of lemon juice, a hint of fresh dill and, of course, hearty noodles. One spoonful can banish all thoughts of cold winter days and warm you down to your toes. This recipe is so straightforward and simple you can make it in just 25 minutes. Make it for two or just yourself with some leftovers. Serve with some crunchy crackers and a small green salad for a fuller dinner or heat a bowl and enjoy for lunch.

Olive oil

Celery

Garlic

Fat free chicken broth

Cooked skinless, boneless chicken breast
1 cup(s), chopped
Shirataki/konjac noodles
200 gm
Fresh dill

Fresh parsley

Instructions

Heat olive oil over medium heat in a medium sized saucepan.

Add carrot, celery, and onion, and cook for 5-7 minutes, stirring frequently, until they soften.

Add garlic and cook 1 minute. Add broth, chicken, and Skinny Noodles and cook for 3-5 minutes to heat through.

Stir in lemon juice, dill, and parsley and serve.
