To create fajitas with ease, use store-bought frozen vegetables and marinated chicken breast.


Fat free flour tortilla

8 medium, regular or whole wheat

Olive oil

2 tsp(s)

Uncooked boneless skinless chicken breast

1 pound(s), cut in strips

Frozen mixed vegetables (corn, lima beans, snap beans, green peas, and carrots)

16 oz, fajita variety, peppers and onions

Fat free sour cream

½ cup(s)

Fat free salsa

½ cup(s)


  1. Preheat oven to 300ºF.
  2. Wrap tortillas in foil. Bake until warm, about 10 minutes.
  3. Meanwhile, heat oil in a large skillet over medium-high heat. Add chicken and sauté until cooked through, stirring frequently, about 3 to 5 minutes. Transfer chicken to a serving plate, cover with foil and transfer to oven to keep warm.
  4. In same skillet over medium-high heat, sauté frozen vegetables until tender-crisp, about 3 minutes. Serve chicken and vegetables with warm tortillas, sour cream and salsa. Yields about 2 tortillas, 3 ounces chicken, 1/2 cup vegetables and 2 tablespoons each sour cream and salsa per serving.


If you want to marinate your own chicken, sauté strips of boneless, skinless chicken breast in 1 teaspoon each liquid smoke and hot sauce.
