The lemony dressing combines Greek yogurt and light mayo for a depth of flavour courtesy of cumin. Red grapes add pops of fruity sweetness, while celery brings the crunch. This salad stores well in the fridge for several days.

Ingredients

Light mayonnaise

Instructions

  1. In a large bowl, stir the mayonnaise, yogurt, lemon zest and juice, parsley, onion, cumin seeds, salt, and black pepper. Stir in the chicken, celery, and grapes.
  2. Divide the greens among 4 plates. Top with the chicken salad.
  3. Serving size: 1 1⁄4 cups chicken salad and 1 1⁄2 cups greens
