This classic Puerto Rican dish consists of shrimp cooked in a savory tomato sauce flavoured with onion, garlic, cilantro, and bell pepper. We call for canned whole tomatoes, which you squish into the sauce with your hands or a spoon. We like the rustic texture this creates, but you can substitute a can of diced tomatoes if you prefer. This dish is traditionally served with white rice; you can use cauliflower rice for a lighter option.

Green bell pepper

Cilantro

Canned whole peeled tomatoes

No salt added canned tomato sauce

Uncooked shrimp

1 pound(s), large, peeled and deveined

Instructions

  1. Heat the oil in a large skillet over medium heat. Add the onion and bell pepper; cook until softened, about 5 minutes. Add the cilantro and garlic; cook 2 minutes. Add the tomatoes and their liquid, squeezing each tomato with your hand to break it into pieces (or crush with the back of a spoon). Stir in the tomato sauce, oregano, salt, and bay leaves. Bring the mixture to a boil; reduce the heat, and simmer, uncovered, for 8 minutes. Stir in the shrimp; cover and simmer just until the shrimp turn opaque, 3 to 5 minutes.
