A creamy herbed mayo mixture, lightened with Greek yogurt, makes these cute sliders lick-your-fingers good. They’re a portable, protein-packed lunch that comes together in a flash when you have hard-cooked eggs and cooked turkey bacon on hand. They also hold up well for up to three days, so you can double or triple the recipe for meal prep, if you’d like. Do try to grind your black pepper fresh for the best flavor; pre-ground pepper can taste musty.

Light mayonnaise

1 tbsp(s)

Plain fat free Greek yogurt

1 tbsp(s)

Fresh basil

1 tsp(s), finely chopped

1 tsp(s), finely chopped

Black pepper

6 large, large, halved lengthwise

Plum tomato

1 medium, cut into 12 thin slices

Cooked turkey bacon

6 slice(s), halved

6 leaf/leaves, large, large, such as Little Gem, or larger leaves torn into small pieces

  1. Combine mayonnaise, yogurt, basil, chives, and ¼ teaspoon pepper in a small bowl. Spread mayonnaise mixture evenly over cut sides of egg halves.
  2. Layer 2 tomato slices, 2 bacon halves, and 1 lettuce leaf over bottom half of each egg. Top with top halves of eggs, cut side down. Sprinkle evenly with remaining ¼ teaspoon pepper.
