Avocado, Spinach, and Feta Wraps
½ medium, halved, pitted, and peeled
Fat free flour tortilla(s)
1 medium, spinach variety, (10-inch)
1 cup(s), lightly packed
1 small, peeled into ribbons
2 medium, peeled into ribbons
Reduced-fat feta cheese
¼ cup(s), crumbled
- Mash together the avocado, salt, and pepper in a small bowl. Spread the mixture evenly on the tortilla. Top with the spinach, zucchini, carrots, and feta; drizzle with the vinegar and oil. Roll up the tortilla to enclose the filling. Cut the wrap in half.
- Yields 1/2 wrap per serving.
