Grilled Cheese Open-Faced Sandwich

cooked long grain brown rice
1 tbsp(s), , or more if necessary
low-fat shredded cheddar cheese
Preheat broiler. Microwave brown rice for 30 seconds with 1 tablespoon (or more) of water so the consistency is slightly sticky. Coat bottom of a small nonstick baking pan with cooking spray and press rice into bottom of pan. Top with cheese and broil until cheese is melted and browned, about 2 to 3 minutes. Remove from oven, slice into triangles and serve.
