Notes

Combine lentils, celery, egg and parsley in a small bowl. Mix mustard and dressing in a cup; add to lentil mixture and mix to coat. (INGREDIENT SWAP OPTION: Substitute 2 slices of diced Canadian bacon or 1/2 cup of diced lean ham for the egg.)
