These fast food knock-offs are not just tasty, they're good for you too.

Ingredients

Dried herbs

1 tsp, Italian

Plain flour

1½ tbs

Panko breadcrumbs

¾ cup(s), (55g)

Zucchini

2 medium

Egg white

2 medium

Oil spray

4 x 3 second spray(s)

Instructions

  1. Preheat oven to 220˚C. Lightly spray a baking tray with oil. Combine dried Italian herbs and flour in a small bowl. Season with salt. Place breadcrumbs in another small bowl.
  2. Slice each zucchini in half lengthways and then each half into 2 pieces width wise. Next, slice each piece of zucchini into 4 fries.
  3. Using an electric mixer, beat egg whites until frothy (almost soft peaks).
  4. Coat a zucchini fry in flour mixture and then dip into egg white. Coat in breadcrumbs. Place coated zucchini on prepared tray and repeat with remaining ingredients. Generously spray with oil. Bake for 12 minutes, turning halfway through, or until golden.

Notes

TIP: Use this technique with any summer squash or eggplant. It also works great with thick-cut onion rings or even green tomatoes. For extra crispy fries, increase the oven temperature to 260˚C and knock 2 minutes off the cooking time.
