Salty miso instantly turns hot water into a tasty flavoursome broth. Filled with tasty soba noodles, edamame, beef and fresh coriander.

Ingredients

Edamame beans

200 g, frozen

Wasabi paste

12 g, (2 tsp)

Beef fillet (tenderloin), raw

400 g, (Buy 4 x 125g)

Miso paste

¼ cup(s), (60g)

Soba noodles, dry

180 g

Carrot(s)

1 medium, cut into matchsticks

Sugar snap peas

100 g, thinly sliced lengthways

Fresh coriander

¼ cup(s), leaves

Instructions

  1. Cook edamame in a medium saucepan of boiling water for 3–4 minutes or until heated through. Drain well. Peel edamame and discard pods.
  2. Spread wasabi paste evenly over both sides of each beef fillet. Season with salt and pepper. Lightly spray a large non-stick frying pan with oil and heat over high heat. Cook beef for 3–4 minutes each side for medium or until cooked to your liking. Transfer to a plate. Cover beef with foil and set aside to rest for 5 minutes before thinly slicing.
  3. Meanwhile, combine 1 litre (4 cups) boiling water and miso paste in a large saucepan over high heat. Bring to the boil. Add soba noodles and cook for 2 minutes or until just tender. Add carrot and sugar snap peas and cook for 1–2 minutes or until just tender. Remove from heat. Add edamame.
  4. Serve noodle mixture topped with beef and coriander.

Notes

SERVING SUGGESTION: Shredded nori or pickled ginger. TIP: You can use fresh tuna fillets instead of beef.
