Wasabi beef fillet with miso soba noodles

Lean beef fillet
400 g, (Buy 4 x 125g)
¼ cup(s), (60g)
1 medium, cut into matchsticks
Sugar snap peas
100 g, thinly sliced lengthways
¼ cup(s), leaves
- Cook edamame in a medium saucepan of boiling water for 3–4 minutes or until heated through. Drain well. Peel edamame and discard pods.
- Spread wasabi paste evenly over both sides of each beef fillet. Season with salt and pepper. Lightly spray a large non-stick frying pan with oil and heat over high heat. Cook beef for 3–4 minutes each side for medium or until cooked to your liking. Transfer to a plate. Cover beef with foil and set aside to rest for 5 minutes before thinly slicing.
- Meanwhile, combine 1 litre (4 cups) boiling water and miso paste in a large saucepan over high heat. Bring to the boil. Add soba noodles and cook for 2 minutes or until just tender. Add carrot and sugar snap peas and cook for 1–2 minutes or until just tender. Remove from heat. Add edamame.
- Serve noodle mixture topped with beef and coriander.
SERVING SUGGESTION: Shredded nori or pickled ginger. TIP: You can use fresh tuna fillets instead of beef.
