Ingredients

Fresh ginger

½ tsp, finely grated

Reduced salt soy sauce

1 tbs

Mirin

½ tsp

Sesame oil

½ tsp

Raw tuna

150 g, sashimi-quality, thinly sliced

Cooked brown rice

½ cup(s), (85g)

Mixed salad leaves

30 g, Asian varieties

Carrot(s)

½ medium, grated

Lebanese cucumber

½ medium, thinly sliced

Radish

1 medium, thinly sliced

Edamame

30 g, shelled, blanched

Ginger, pickled

20 g

Green shallot(s)

1 individual, thinly sliced diagonally

Sesame seeds

½ tsp, black variety

Instructions

  1. Combine ginger, soy sauce, mirin and sesame oil in a bowl. Stir marinade to combine. Place tuna in a bowl and drizzle with half the marinade. Set aside to marinate for 5 minutes.
  2. Meanwhile, arrange rice, salad leaves, carrot, cucumber and radish in a bowl.
  3. Top salad with tuna, edamame, ginger, shallot and sesame seeds. Drizzle with remaining marinade to serve.
