Thyme scented pea and ham soup

Infused with a touch of fresh thyme, this ever-popular soup is thick, creamy and always delicious.


Ingredients
Dried green split peas
1½ cup(s), rinsed, (300g)
Deli-sliced leg ham
175 g, (hock), fat trimmed
Brown onion
1 medium, chopped
Celery
1 stick(s), chopped
Carrot(s)
1 medium, chopped
Garlic
1 clove(s), crushed
Fresh thyme
1 tbs
Frozen green peas
1 cup(s), (120g)
Instructions

Combine the split peas, water, ham hock, onion, celery, carrot, garlic, thyme and 1 litre (4 cups) water in a large saucepan over high heat. Bring to the boil. Reduce heat to low and simmer, covered, for 1½ hours, skimming any froth from the surface if necessary.

Using tongs, remove the ham hock from the soup. Allow to cool slightly before removing the meat from the bone. Discard bone. Shred meat with a fork and set aside. Add ¾ cup (90g) of the frozen peas to the soup and simmer for 10 minutes or until peas are tender.

Using a stick blender or food processor, puree soup until almost smooth. Return soup to the pan. Add the remaining peas and shredded meat and stir over low heat until heated through. Season with salt and freshly ground black pepper. Serve.
