Red onion
½ medium, finely chopped
Lean pork mince
500 g
Fresh lemongrass
1 piece(s), finely chopped
Fresh red chilli
1 whole, deseeded, finely chopped
Fresh ginger
3 tsp, finely grated
Fish sauce
2 tsp
Fresh mint
1½ tbs, chopped, extra leaves to serve
Lime rind
2 tsp, finely grated
Egg(s)
1 medium, lightly beaten
Light whole egg mayonnaise
3 tsp
Sweet chilli sauce
1 tsp
Wholemeal bread roll
4 medium, (4x50g)
Savoy cabbage
1 cup(s), shredded
Carrot(s)
1 cup(s), grated, grated
Oil spray
1 x 3 second spray(s)

Combine onion, mince, lemongrass, chilli, ginger, fish sauce, mint, lime rind and egg in a medium bowl. Shape mixture into four 2cm-thick patties.

Lightly spray a large non-stick frying pan or chargrill with oil and heat over medium heat. Cook patties for 10 minutes, turning occasionally, or until cooked through. Combine mayonnaise and sweet chilli sauce in a small bowl. Serve burger patties in rolls filled with extra mint leaves, cabbage, carrot and the chilli mayo.
