Sage, mustard and lemon-scented turkey goes perfectly with sweet grilled pears.

Ingredients

Fresh sage

2 tbs, chopped

Whole grain mustard

1 tbs

Lemon juice

1 tbs

Pepper

¼ tsp, white

Olive oil

1 tbs

Skinless turkey breast

450 g, (Buy 4x125g) fat trimmed

Pear(s)

2 medium, unpeeled, cut into wedges

Asparagus

2 bunch(es), halved diagonally

Mixed salad leaves

100 g

Snow peas

100 g, thinly sliced

Red radish

4 large, cut into matchsticks

Vinegar

1 tbs, raspberry

Oil spray

2 x 3 second spray(s)

Instructions

  1. Combine sage, mustard, juice, white pepper and oil in a small bowl. Spread mixture evenly over turkey.
  2. Preheat a chargrill or barbecue over medium-high heat. Cook turkey for 3–4 minutes each side or until cooked through. Transfer to a plate. Cover turkey with foil and set aside to rest for 5 minutes.
  3. Meanwhile, cook pears for 2 minutes each side or until lightly charred and tender. Lightly spray asparagus with oil. Cook, turning, for 2 minutes or until lightly charred and tender.
  4. Combine asparagus, salad leaves, snow peas, radish and vinegar in a large bowl. Serve turkey with pears and salad.

Notes

SERVING SUGGESTION: Rye sourdough bread. TIP: You can use nectarines instead of pears and white balsamic vinegar instead of raspberry vinegar.
