Topped with creamy peanut butter and crushed peanuts, these biscuits are delicious eaten while still warm from the oven.

Ingredients

Unsalted butter

2 tbs, at room temperature

Icing sugar

2 tbs

Vanilla bean extract, alcohol free

¼ tsp

Plain flour

¼ cup(s), (40g)

Plain peanut butter powder

¼ cup(s), (30g)

Skim milk

1 tbs

Baking powder

½ tsp

Natural peanut butter (100% nuts)

1½ tbs

Granulated or crushed peanuts

20 g

Instructions

  1. Preheat to 180°C. Line a baking tray with baking paper. Mix butter, sugar, vanilla and ¼ teaspoon salt in a small bowl with a rubber spatula until creamy. Stir in flour, peanut butter powder, milk and baking powder until smooth and combined.
  2. Divide dough into 12 equal pieces. Using damp hands, roll pieces into balls, then flatten into 2½cm rounds. Place rounds 3cm apart on prepared tray. Bake for 10-12 minutes, until biscuits are puffed and lightly golden. Cool on the tray for 5 minutes.
  3. Gently spread ½ tsp peanut butter onto each biscuit, then sprinkle with ½ tsp peanuts.
