Ingredients

Oil spray

1 x 3 second spray(s)

Shortcut bacon

2 slice(s), (2 x 25g slices), roughly chopped

Spring onion(s)

2 individual, finely chopped

Frozen green peas

100 g

Vegetable stock

350 ml, heated

Fresh thyme

1 tsp

Skim milk

Instructions

  1. Lightly spray a deep frying pan with oil and add the chopped bacon. Cook, stirring for 2-3 minutes, until browned. Remove from the pan and set aside.
  2. Add the spring onions to the pan with the hot vegetable stock and the thyme leaves. Bring to the boil, then reduce the heat and simmer for 1 minutes. Remove from the heat and ladle into a blender, or use a hand held blender. Blend until smooth and pour back into the pan.
