Pea and bacon soup

This pea and bacon soup is hearty, mild and satisfying. Perfect for a chilly evening.


Ingredients
Oil spray
1 x 3 second spray(s)
Shortcut bacon
2 slice(s), (2 x 25g slices), roughly chopped
Spring onion(s)
2 individual, finely chopped
Frozen green peas
100 g
Vegetable stock
350 ml, heated
Fresh thyme
1 tsp
Skim milk
2 tbs
Instructions

Lightly spray a deep frying pan with oil and add the chopped bacon. Cook, stirring for 2-3 minutes, until browned. Remove from the pan and set aside.

Add the spring onions to the pan with the hot vegetable stock and the thyme leaves. Bring to the boil, then reduce the heat and simmer for 1 minutes. Remove from the heat and ladle into a blender, or use a hand held blender. Blend until smooth and pour back into the pan.

Add the skim milk and season to taste. Warm through and ladle into a bowl or large mug. Top with the crispy bacon and serve.
