Parmesan turkey schnitzel

Our cheesy, herby and crunchy turkey schnitzels are quick to prepare and absolutely delicious, making for a perfect lean dinner option.

Ingredients

Plain flour

2 tbs

Egg white

2 medium

Panko breadcrumbs

50 g, 2/3 cup

Grated parmesan cheese

25 g, (1/3 cup)

Fresh flat-leaf parsley

1 tbs, chopped

Skinless turkey breast

480 g, (Buy 4 x 120g fillets)

Green string beans

250 g

Garlic

1 clove(s), crushed

Cherry tomatoes

250 g

Oil spray

2 x 3 second spray(s)

Instructions

  1. Preheat oven to 200°C. Line a baking tray with baking paper and lightly spray with oil.
  2. Place the flour on a plate and season with salt and pepper. Whisk the egg whites and 1 tablespoon of water in a shallow bowl until combined. Place breadcrumbs, parmesan and parsley on a plate and stir to combine.
  3. Toss 1 turkey steak in the flour then dip into the egg white mixture. Coat in breadcrumb mixture and place on prepared tray. Repeat with remaining turkey, flour, egg white and breadcrumb mixture. Lightly spray the turkey steaks with oil. Bake, turning once halfway through cooking, for 15-20 minutes or until golden and cooked through.
  4. Meanwhile, cook the beans in a saucepan of boiling salted water for 2 minutes or until tender crisp. Drain. Lightly spray a non-stick frying pan with oil and heat over medium heat. Cook garlic, tomato and beans, stirring, for 2-3 minutes or until heated through. Serve turkey schnitzels with the vegetables.

Notes

SERVING SUGGESTION: Mashed potato. Cook 600g potatoes, chopped, in a saucepan of boiling salted water until tender. Add ⅓ cup (80ml) skim milk and mash
