This meatloaf adds pork as well as beef and this combination with the famous American ingredients is simply spectacular!

Ingredients

Extra lean beef mince, raw

500 g

Lean pork mince

300 g

Dried breadcrumbs

¾ cup(s)

Carrot(s)

1 medium, grated

Brown onion

1 medium, grated

Pickled gherkin, drained

30 g, finely chopped

Mustard

2 tbs

Barbecue sauce

2 tbs, (smokey)

Tomato sauce (ketchup)

1 tbs

Egg(s)

1 medium, lightly beaten

Cherry tomatoes

500 g, halved

Tomato(es)

2 medium, (vine-ripened), chopped

Fresh basil

2 tbs, (baby)

Red wine vinegar

1 tbs

Rocket

6 cup(s), (120g)

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat oven to 200°C or 180°C fan-forced. Lightly spray a 19cm x 9cm (base measurement) loaf tin with oil.
  2. Place both types of mince, breadcrumbs, carrot, onion, gherkin, mustard, barbecue and tomato sauces and egg in a large bowl. Season with salt and freshly ground black pepper. Mix until well combined. Spoon mixture into prepared tin, pressing down firmly. Cover with foil and bake for 25 minutes or until cooked through. Set aside in tin for 10 minutes.
  3. Meanwhile, combine both types of tomatoes, basil and vinegar in a large bowl. Set aside for 15 minutes.
  4. Drain excess juice from meatloaf and turn onto a serving plate. Slice and serve with tomato salad and rocket.

SERVING SUGGESTION: Steamed green beans, plus wholegrain bread (35g per serve).
