Garlic prawns with chilli

This hot and garlicky seafood entrée is sure to impress, and can be prepared and served in just 30 minutes.

Ingredients

Raw peeled prawns

500 g, (bought peeled), deveined (see tip)

Olive oil

1 tbs

Reduced fat oil spread

1 tbs

Garlic

3 clove(s), crushed

Fresh red chilli

1 whole, finely chopped

Fresh flat-leaf parsley

¼ cup(s), finely chopped

Lemon(s)

1 medium, cut into wedges, to serve

Instructions

  1. Using a sharp knife, make a cut along the belly of each prawn (being careful not to cut all the way through). Open out and press lightly to flatten.
  2. Heat a large non-stick frying pan over medium heat. Add oil and spread and heat for 30 seconds or until spread has melted. Add garlic and chilli and cook, stirring, for 30 seconds or until fragrant.
  3. Increase heat to medium–high. Add prawns and cook, stirring, for 5 minutes or until just cooked through. Stir in parsley. Serve with lemon wedges.

Notes

SERVING SUGGESTION: Whole grain sourdough bread (contains gluten) TIP: To devein prawns, gently break off the head with your fingers so the vein is exposed (cutting with a knife will make the vein harder to find). Grab the vein with your fingers and carefully pull it out.
