This pea and ham soup is hearty, mild and satisfying. Perfect for a chilly evening

Ingredients

Olive oil

1 tbs

Brown onion

1 medium, finely chopped

Fennel

1 small, thinly sliced

Celery

3 stick(s), thinly sliced

Garlic

2 clove(s), crushed

Dried green split peas

1½ cup(s)

Salt reduced chicken stock

4 cup(s)

Fresh green peas

2 cup(s)

97% fat-free deli sliced ham

200 g, shredded

Instructions

  1. Heat oil in a large saucepan over medium heat. Add onion, fennel, celery and garlic and cook, stirring occasionally, for 10 minutes or until vegetables are softened and lightly browned.
  2. Add split peas and stock and bring to the boil. Reduce heat and simmer, partially covered, for 1 hour or until peas are very soft and begin to break down. Add frozen peas and ham and simmer, stirring, for 5 minutes or until heated through. Serve.

Notes

SERVING SUGGESTION: Wholegrain bread.TIP: This soup is suitable to freeze. Ladle cooled soup into individual portion-sized airtight containers, leaving a 1–2cm gap at the top for expansion. Label, date and freeze for up to 3 months. Thaw in the fridge overnight before reheating in the microwave or on the stovetop.
