Ingredients

frozen corn kernels

½ cup(s), (80g)

cos lettuce

1 baby, leaves shredded

red cabbage

1 cup(s), shredded

cherry tomato

100 g, halved

red capsicum

½ medium, thinly sliced

radish

2 small, cut into matchsticks

fresh coriander

2 tbs, chopped

tuna, canned in springwater, drained

185 g

lime juice

1 tbs

reduced salt soy sauce

2 tsp

sesame oil

1 tsp

fresh red chilli

1 whole, deseeded, finely chopped

Instructions

  1. Place corn in a heatproof bowl and cover with boiling water. Stand for 2 minutes, then drain. Refresh under cold running water. Drain.
  2. Combine corn, cos, cabbage, tomato, capsicum, radish, coriander and tuna in a large bowl.
  3. Whisk lime juice, soy sauce, sesame oil and chilli in a small bowl. Add dressing to salad and toss to combine.

Notes

TIPS: • Add dressing to slaw just before serving to keep salad crisp. • ADD IT: Microwave brown rice.
