Ingredients

Cauliflower

½ medium, cut into florets

Light mozzarella cheese

½ cup(s), grated, (60g)

Plain flour

cup(s), (100g)

Egg(s)

2 medium

Fresh oregano

2 tsp, finely chopped

Garlic powder or flakes

½ tsp, granules

Roasted capsicum, not in oil

1 cup(s), (145g), drained, sliced

Reduced fat feta cheese

cup(s), (170g), crumbled

Black olives, drained

10 individual, pitted, chopped

Green shallot(s)

2 individual, thinly sliced

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat oven to 220°C. Line a large baking tray with baking paper and lightly spray with oil.
  2. Place cauliflower florets in a food processor. Process to consistency of rice. Transfer to a large bowl. Add mozzarella, flour, eggs, oregano and garlic. Season with salt and pepper and mix to combine. Spoon crust mixture into two 20cm circles on prepared tray. Smooth with a spoon to form an even layer. Bake for 20 minutes or until medium brown on base. Carefully flip over. Bake for a further 10 minutes or until evenly browned.
  3. Sprinkle crust with roasted capsicum, feta, olives and shallots. Bake for 5 minutes or until heated through. Serve.

Notes

Tip: If you don’t have a food processor, don't worry. You can use a box grater or sharp knife to prep the cauliflower. Or save time by purchasing packaged cauliflower rice from a supermarket - many now carry this trendy ingredient fresh in the produce section or frozen alongside other frozen vegetables.
