Broccolini and snow peas with hazelnut crumbs
Tender broccolini and snow peas sprinkled with crunchy hazelnut and sourdough crumbs

20 g, sourdough
Fresh lemon rind
1 tsp, finely grated
- Lightly spray a large non-stick frying pan with oil and heat over medium heat. Add hazelnuts and breadcrumbs and cook, stirring, for 2–3 minutes or until golden.
- Boil, steam or microwave broccolini and snow peas until just tender. Drain and place in a serving dish. Combine lemon rind, lemon juice and olive oil in a small bowl and drizzle over vegetables. Sprinkle with hazelnut crumbs. Serve.
