Dense with dried fruit and nuts, these bite-sized snacks make the perfect morning pick-me-up.


Ingredients
Dried mixed berries
220 g, (see tip)
99% fat-free, plain or natural yoghurt, unsweetened
⅓ cup(s), (80g)
Vanilla bean extract, alcohol free
1 tsp
Wheat germ
¾ cup(s), (75g)
Rolled oats, dry
½ cup(s), (45g)
Raw almonds
½ cup(s), (80g) finely chopped
Instructions

Place dried berries in a small bowl and cover with boiling water. Set aside for 5 minutes to soften. Drain.

Process berries, yoghurt and vanilla in a food processor until smooth. Add wheat germ and oats and process until combined. Transfer mixture to a bowl, cover and refrigerate for 1 hour or until mixture is firm.

Place almonds in a shallow dish. Shape mixture into 25 balls and roll in almonds to coat.
