Ingredients

Orange sweet potato (kumara)

600 g, cut into thin wedges

Red onion

2 medium, cut into wedges

Fresh red chilli

2 whole, cut into wedges

Skinless white fish, raw

560 g, (Buy 4 x 140g) firm, skinless variety

Peri peri sauce

30 g

Ground cumin

1 tsp

Ground paprika

1 tsp

Dried thyme

1 tsp

Extra virgin olive oil

1 tbs

Instructions

  1. Preheat oven to 200°C.
  2. Place sweet potatoes, onions and chillies on a large baking tray. Add cumin, paprika, thyme and oil. Season with salt and pepper and gently toss to coat. Bake for 40 minutes or until sweet potato is just tender.
  3. Place fish on a small plate and pour over sauce, then turn to coat fish. Arrange fish on top of vegetables. Bake for a further 10-12 minutes or until fish is cooked through. Serve.

Notes

TIP: To check the fish is cooked through, break off a small piece from one of the loins with a fork. The flesh should easily break into flakes and be opaque all the way through.
