Oats, cinnamon and brown sugar make an easy crumble to top the cakey base and fruity layer of this high tea treat

Ingredients

Reduced fat oil spread

Apple, stewed, unsweetened

400 g, (canned, sliced pie apple)

Instructions

  1. Preheat oven to 180°C or 160°C fan-forced. Lightly spray a 30cm x 20cm lamington tin with oil. Line tin with baking paper, allowing paper to hang 3cm over both long sides.
  2. Using electric beaters, beat 85g spread, caster sugar and egg in a small bowl until light and fluffy. Sift ½ cup (75g) plain flour, 1/3 cup (50g) self-raising flour and custard powder into a bowl. Stir flour mixture into egg mixture. Spread mixture into prepared tin. Bake for 15 minutes. Cool for 10 minutes. Increase oven to 200°C or 180°C fan-forced.
  3. Meanwhile, combine remaining flours, brown sugar and cinnamon in a large bowl. Using fingertips, rub in remaining spread until mixture resembles breadcrumbs. Stir in oats.
  4. Sprinkle apple over slice base. Spoon oat mixture over fruit and press down lightly with the back of the spoon to smooth the top. Bake for 15–20 minutes or until golden. Cool in pan. Serve.

Notes

TIP: This slice can be stored in an airtight container for up to 3 days.You can use canned pitted plums or cherries in natural juice (well drained) instead of apple.
