Just because you are eating alone doesn't have to mean you have to miss out on great-tasting meals. Whip up a delicious gourmet solo dinner!

Ingredients

Calamari or squid, raw

150 g, (hoods), cleaned

Peanut oil

2 tsp

Garlic

1 clove(s), crushed

Green shallot(s)

1 individual, cut into 2cm lengths

Sweet chilli sauce

1 tbs

Lime juice

1 tbs

Fresh coriander

2 tbs, leaves

Instructions

  1. Cut cleaned squid hoods down the centre to open out flat. Using a sharp knife, score the inside flesh in a crisscross pattern, then cut squid into thick strips.
  2. Heat a wok over high heat. Add peanut oil and heat for 30 seconds. Add garlic and green shallots, stir-frying for 1 minute. Add squid, stir-frying for 1–2 minutes or until just cooked. Add sweet chilli sauce and lime juice, stir-frying until combined. Serve squid sprinkled with coriander.

SERVING SUGGESTION: Enjoy with steamed vegies and white rice.
