WW's healthy zucchini slice is super delicious and quick and easy to make. Mix it up buy adding different vegetables to play with the flavour. Enjoy as a perfect lunchbox snack for kids, or serve with a side salad as a simple and healthy main meal.

Ingredients

Leek

1 whole, small variety, thinly sliced

zucchini

750 g, thinly sliced

egg(s)

8 medium

grated parmesan cheese

½ cup(s), (40g)

plain flour

¼ cup(s), (35g)

oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat oven to 160°C. Line the base and sides of a 20cm (base measurement) square cake pan with baking paper.
  2. Lightly spray a medium non-stick frying pan with oil and heat over medium heat. Add the leek and 1 tablespoon water and cook, stirring, for 5 minutes or until soft (add a little more water to help soften if needed). Stir in the zucchini. Cook, covered, for 5 minutes, stirring once, or until the zucchini softens but holds its shape. Set aside to cool.
  3. Whisk eggs, parmesan, flour and salt and pepper in a medium bowl until combined. Add the cooled zucchini mixture and stir to combine. Pour the mixture into the prepared pan and smooth the surface. Bake for 40 minutes or until centre is just set.

Notes

SERVING SUGGESTION: Salad of rocket, cherry tomatoes and red capsicum, drizzled with balsamic vinegar.
