Teriyaki prawn and soba noodle stir-fry
Raw peeled prawns
500 g, (24), peeled, tails intact
1 large, thinly sliced
150 g, mixed Asian-style, thinly sliced
2 clove(s), thinly sliced
⅓ cup(s), (3cm-piece) cut into matchsticks
Reduced salt soy sauce
- Prepare noodles following packet instructions or until just tender. Drain. Refresh under cold water and drain.
- Heat a wok over high heat. Add half the oil and heat for 20 seconds. Stir-fry prawns fry for 2–3 minutes or until just cooked through. Transfer to a plate.
- Reheat same wok over high heat. Add remaining oil and heat for 20 seconds. Stir-fry capsicum, snow peas, mushrooms, garlic and ginger for 2–3 minutes or until tender.
- Add prawns, soy sauce, honey and noodles and stir-fry for 1 minute or until heated through. Season with pepper. Serve.
