Teriyaki prawn and soba noodle stir-fry

Ingredients

Soba noodles, dry

180 g

Olive oil

1 tbs

Raw peeled prawns

500 g, (24), peeled, tails intact

Red capsicum

1 large, thinly sliced

Snow peas

300 g

Mushrooms

150 g, mixed Asian-style, thinly sliced

Garlic

2 clove(s), thinly sliced

Fresh ginger

cup(s), (3cm-piece) cut into matchsticks

Reduced salt soy sauce

2 tbs

Honey

1 tbs

Instructions

  1. Prepare noodles following packet instructions or until just tender. Drain. Refresh under cold water and drain.
  2. Heat a wok over high heat. Add half the oil and heat for 20 seconds. Stir-fry prawns fry for 2–3 minutes or until just cooked through. Transfer to a plate.
  3. Reheat same wok over high heat. Add remaining oil and heat for 20 seconds. Stir-fry capsicum, snow peas, mushrooms, garlic and ginger for 2–3 minutes or until tender.
  4. Add prawns, soy sauce, honey and noodles and stir-fry for 1 minute or until heated through. Season with pepper. Serve.

Notes

TIP: Mixed Asian mushrooms are found in the fresh produce section of most supermarkets. If unavailable, use button mushrooms. Add it: 115g baby corn (halved) in Step 3. Swap it: Noodles for 2 cups (340g) steamed brown rice.
