Spinach and feta mini pizzas
These little morsels of flavour mean you can have your pizza with none of the guilt
Baby spinach leaves
Wholemeal sandwich thins
40 g, finely chopped
Extra light cheddar cheese
⅓ cup(s), grated, (40g), grated
40 g, crumbled
Dried chilli flakes
2 g, dried
- Preheat grill on high. Place spinach in heatproof bowl and pour over boiling water. Stand for 1 minute or until wilted. Drain and squeeze out excess water.
- Split Helga’s Sandwich Thins in half and toast in toaster. Place cut-side up on a baking tray. Spread each with pizza sauce, then sprinkle with onion and arrange wilted spinach evenly on top. Sprinkle with grated cheese, feta and dried chilli flakes. Grill for 2–3 minutes or until cheese is melted. Serve.
SERVING SUGGESTION: Salad of cherry tomatoes and rocket drizzled with 1 tablespoon of balsamic vinegar.
