This quick and easy recipe gives crunchy snow peas an exotic edge thanks to the fiery and brackish bite of the soy and ginger.

Ingredients

Snow peas

275 g, trimmed

Sesame oil

2 tsp

Fresh ginger

1 tsp, grated

Reduced salt soy sauce

2 tbs

Sesame seeds

2 tsp, toasted

Instructions

  1. Boil, steam or microwave snow peas until just tender. Drain. Meanwhile heat sesame oil and ginger in a small saucepan over medium heat for 30 seconds or until fragrant.
  2. Add soy sauce and cook until heated through. Serve snow peas drizzled with warm dressing and sprinkled with sesame seeds.

Notes

You can use asparagus or sugar snap peas instead of snow peas.
