Ingredients

Olive oil

1 tsp

Onion

1 medium, coarsely grated

Garlic

3 clove(s), crushed

Carrot(s)

2 medium, coarsely grated

Zucchini

1 medium, coarsely grated

Turkey breast mince

240 g

Canned diced tomatoes

400 g, (1 x 400g can)

Pasta

145 g, dried, elbow variety

Fresh thyme

2 tsp, finely chopped, plus extra sprigs to serve

Mozzarella

½ cup(s), grated, (60g), grated

Instructions

  1. Preheat oven to 180°C. Heat oil in a large saucepan over medium-high heat. Cook onion, garlic, carrot and zucchini, stirring, for 5 minutes, or until soft. Add mince and cook, breaking up any lumps, for 5 minutes, or until mince has browned.
  2. Add tomatoes. Fill tomato can ¾ full with water and add water to pan. Season with salt and pepper. Stir in pasta and thyme until well combined.
  3. Transfer pasta mixture to a 2L (8-cup) capacity baking dish and sprinkle with cheese. Bake for 35 minutes, or until cheese is golden and bubbling and pasta is tender. Stand for 5 minutes. Serve sprinkled with extra thyme sprigs.
