In this comforting pasta bake recipe the pasta doesn’t require pre-cooking so it’s quick to prepare, leaving the oven to do the rest. Complete the meal by serving a leafy salad on the side for extra veg. Recipe by our WW Ambassador Sarah. Follow her on Instagram @sarahs_recipes.

Ingredients

Onion

1 medium, coarsely grated

Garlic

1 clove(s), crushed

Carrot(s)

2 medium, coarsely grated

Zucchini

1 medium, coarsely grated

Turkey breast mince

240 g

Canned diced tomatoes

1 400g can

Dry pasta

145 g, dried, elbow variety

Fresh thyme

2 tsp, finely chopped, plus extra sprigs to serve

Grated mozzarella

½ cup(s), (60g)

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat oven to 180°C. Heat a large saucepan over medium–high heat and lightly spray with oil. Cook onion, garlic, carrot and zucchini, stirring, for 5 minutes or until soft. Add mince and cook, stirring to break up lumps, for 5 minutes or until browned.
  2. Stir in tomatoes. Half fill the tomato with water and add to pan. Season with salt and pepper. Stir in pasta and thyme until well combined.
  3. Transfer pasta mixture to a 1.5L (6-cup) capacity baking dish and sprinkle with mozzarella. Bake for 30 minutes or until cheese is golden and pasta is tender. Stand for 5 minutes. Serve sprinkled with extra thyme sprigs.

Notes

TIP: You can replace turkey mince with chicken breast mince and use any variety of small pasta shapes. Try pasta spirals or bow tie pasta or use wholemeal pasta for added fibre.
