Ingredients

olive oil

1 tsp

onion

1 medium, coarsely grated

garlic

3 clove(s), crushed

carrot(s)

2 medium, coarsely grated

zucchini

1 medium, coarsely grated

turkey breast mince

240 g

canned diced tomatoes

400 g, (1 x 400g can)

pasta

145 g, dried, elbow variety

fresh thyme

2 tsp, finely chopped, extra sprigs to serve

mozzarella

60 g, grated

Instructions

  1. Preheat oven to 180°C. Heat oil in a large saucepan over medium-high heat. Cook onion, garlic, carrot and zucchini, stirring, for 5 minutes or until softened. Add mince and cook, breaking up any lumps with a spatula, for 5 minutes.
  2. Add tomatoes. Fill tomato can three-quarters full with water and add water to pan. Season with salt and pepper. Stir in pasta and thyme until well combined.
  3. Transfer pasta mixture to an 8-cup (4L) capacity baking dish and sprinkle with cheese. Bake for 35 minutes or until cheese is golden and bubbling and pasta is cooked through. Stand for 5 minutes. Serve sprinkled with extra thyme sprigs.

Notes

TIP: To make turkey breast mince, place turkey breast steaks in a food processor. VARIATION: Add 2 tbs chopped fresh leaf parsley with thyme in Step 2 or swap turkey mince for 240g chicken breast mince in Step 1.
