Smoked ham and broccolini creamy pasta

Who can go past a creamy pasta dish? Filled with greens and smoked ham, this lightened up version tastes just as good as the real deal.


Ingredients
Dry pasta
240 g, large spirals
Oil spray
2 x 3 second spray(s)
97% fat-free deli sliced ham
100 g, chopped
Brown onion
1 medium, finely chooped
Garlic
1 clove(s), crushed
Plain flour
1½ tbs
Skim milk
1¾ cup(s), (435ml), warmed
Broccolini
2 bunch(es), chopped
Frozen green peas
¾ cup(s), (90g), thawed
Grated parmesan cheese
¼ cup(s), finely grated
Instructions

Cook pasta in a saucepan of boiling salted water, following pack instructions, or until just tender. Drain.

Meanwhile, lightly spray a large non-stick frying pan with oil. Heat over high heat. Cook ham, stirring, for 2-3 minutes or until lightly browned. Drain on paper towel.

Lightly spray same pan with oil and heat over medium-high heat. Cook onion and garlic, stirring, for 3-4 minutes or until softened. Add flour. Cook, stirring, for 1 minute. Gradually stir in milk until smooth. Stir over low heat for 1-2 minutes or until mixture boils and slightly thickens. Add broccolini, peas and ham. Reduce heat to low. Simmer for 3-4 minutes or until vegetables are just tender.

Stir in cheese. Season with salt and pepper. Add pasta. Toss to combine.
