Roast beef and herbed cream cheese wrap
This portable wrap is perfect for picnics or packed lunches. The roasted capsicum adds a depth of flavour to this otherwise classice roast beef combination.
Light cream cheese
2 tsp, chopped
Wholemeal lavash bread
67 g, (1 piece)
Deli-sliced roast beef
50 g, rare
½ medium, cut into ribbons
30 g, roasted (no oil)
Mixed salad leaves
- Combine cream cheese and chives in a small bowl. Lay lavosh on a flat surface and spread with cream cheese mixture.
- Arrange beef slices down the centre of lavosh. Top with cucumber, capsicum and lettuce. Roll tightly to enclose filling. Cut into 4 and serve.
TIPS: To take this to work, wrap uncut roll in plastic wrap. Transport in a chiller bag and refrigerate until required.To make your own roasted capsicum, grill quarters of deseeded capsicum, skin-side up, until blistered. Place in a plastic bag to cool before peeling skin.
